Instructions:

1. Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Cook bowtie pasta according to package directions.
  3. Drain and set aside.

2. Season & Cook the Chicken

  1. Pat chicken thighs dry.
  2. Season both sides with adobo, paprika, onion powder, cumin, and garlic salt.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add chicken and cook 4–6 minutes per side until browned and cooked through.
  5. Remove, chop into bite-sized pieces, and set aside.

3. Cook the Bacon

  1. In the same skillet, cook bacon until crispy.
  2. Transfer to a paper towel-lined plate.
  3. Leave about 1–2 tablespoons of bacon grease in the pan for flavor.

4. Make the Sauce & Veggies

  1. Reduce heat to medium.
  2. Add diced bell peppers and corn to the skillet.
  3. Sauté for 3–4 minutes until slightly tender.
  4. Season with onion powder, chili powder, paprika, cumin, adobo, and garlic salt.
  5. Add Velveeta cubes and stir until fully melted.
  6. Stir in salsa and diced tomatoes.
  7. Simmer 2–3 minutes. Adjust seasoning to taste.

5. Assemble the Dish

  1. Add cooked pasta to a large serving bowl or pot.
  2. Top with chopped chicken and crispy bacon.
  3. Pour cheese sauce over everything.
  4. Gently toss until well combined.
